CRISPY LIEMPO






           Liempo is the one of the most favorite part of some foodies. There are many ways in cooking liempo especially those who had a restaurant or mini carinderia. They cooked this in a different way like grilled, fried, marinated and sizzling and the most popular recipe is marinated then grilled it and served with hot rice and spicy sauce.





               I made this recipe just for you foodies, while I'll cooked liempo before and fried it, I boil it for 10-15 minutes in a vinegar, salt and pepper with a lot of garlic. Once I had no available ingredients in our kitchen and I had no choice but to fry the liempo as clean and raw and only salt and pepper to have it taste. I experiment different dish for liempo by coating it for regular breadings then fried it without boiling that I do before. And I discovered that it is not difficult to slice the liempo when you fry it directly without pre boiling in the vinegar mixture solution. Before when I boil it first, the liempo has a hard texture and difficult to slice when you boil it before you fry.Just always remember that you clean properly the liempo before you cooked it. CRISPY LIEMPO

SERVING: 4 Person
COOKING TIME: 30 mins.

INGREDIENTS

1 kilo Pork liempo, cleaned.
1/2 cup Flour
1/2 cup Bread crumbs
1 Egg beaten
1 tsp. Salt
1 tsp. Pepper
1 tsp. Garlic Powder
1 tbsp. Calamansi juice
Oil for frying


PROCEDURE

        Clean the liempo well after you buy it from the market.Pour the Salt, Pepper, Calamansi juice and Garlic powder to the liempo from side to side while pinch on each side with the use of fork to absorb all the spices. Set aside the liempo for 10 mins then start the breading procedure by the Flour+Egg+Breadcrumbs and repeat this twice. Heat the pan and add the oil. Always remember my tips in frying that if you want a better result to your fried dish, avoid using high fire to your stove to make your dish fully cooked. When the liempo was already cooked, chopped it in lengthwise as in 2-3 inches length then served.Happy Eating..!!

            I saw this kind of dish in an English magazine and they used it for dinner party with friends. There was once that my nephew was hungry after his school hours and we are alone at home. I'll check our food storage to view the available ingredients to cooked for him and I saw 5 pcs. of large white onion and 3 pcs. of sausages and I'll remember the onion rings that I read yesterday in my cooking magazine.
           Filipino dish have used different kinds of spices and the most commonly use is the onion. The onion has it aroma fragrant, a little bit bitter and sweet. Some people when they chopped onion they have their tears on their eyes because of the smell of the onion. I still remember my 5 y/o niece when she saw me chopping the onion while I preparing our lunch and she said " Tito..bakit ka umiiyak? dahil ba naawa ka sa sibuyas (onion)..?" and I laugh a lot when she asked that.
            In the Philippines, If im not mistaken we have 3 kinds of onion the large violet, the small one and the Large white.
             In this recipe if you don't have available sausages, you can use hotdog as alternative or the longganisa if you want. In terms of sausages, the popular known person who love the sausages are the european. Here in the Philippines the most popular are the hotdog and the longganisa. Some of my future post in this blog,  I post the specialty Longganisa in our nearby town to see it just for you to have your idea in seeing the one of the best longganisa of the Philippines.
            I recommend this recipe for you guys who loved to have a party at home for your pulutan and to those moms, I recommend this as snack for your kids. Enjoy..!! Happy Eating..!!!

ONION RINGS AND BREADED SAUSAGE WITH SPICY MAYO DIP

SERVING: 3 Person
COOKING TIME: 15 mins.

INGREDIENTS

3 Large White Onion cut into Rings
4 Sausages cut into lengthwise
1/2 cup Breadcrumbs
1/2 cup Flour
1 Egg Beaten
1 tsp. Garlic Powder
Pinch of Salt and Pepper
Oil for Frying

For the Dip:

2 Tbsp. Mayonaise
1 tsp. Hot Sauce (Use Catsup as option if you cook this for your kids)
Salt and Pepper
1 tsp. Sugar
1 tsp. Garlic Powder

PROCEDURE

         Pre-heat the frying pan and pour the oil.Start breading procedure, add the garlic powder, salt and pepper to the flour and mixed. Always remember the procedure of breading sequence which is FEB or known as Flour+Egg+Breadcrumbs. Start breading by dipping the onions and sausages in your flour mixture then to the egg then to the breadcrumbs and repeat this procedure twice. Fry the onion and sausages in batch and my cooking tips while you frying is to slow the fire of the pan to avoid any unfavorable texture of your food. Meanwhile in a small bowl, mixed all the ingredients for the spicy dip and set aside. When you finish frying, in a plate put a clean bond paper or tissue paper to absorb the oil of the food to eliminate the oily taste of the food. Served this and Enjoy Eating..!!



OMELETTE



TOMATO AND HAM OMELET



              This is the first dish that I learned to cook. Everyday before I went to school during my elementary days, my mom always cook this as our breakfast. There are a times that I seen in a cartoon movie that the main character cooked different omelet that's why I said to my mom that I want to learn on how to cook an omelet. Every weekend, as a kid I'd practice this dish together with my mom on how to get the best taste of omelet. Here in my blog I can share to you my memorable childhood dish.

Serving: 2-3 person
Cooking time: 15 minutes
Estimated cost: P80-P100

INGRIDIENTS
            1 Pouch/can of cooked ham or any ham available at your home and cut into cubes
            2 Whole eggs beaten
            2 Large tomato cut into cubes
            1 Sliced onion
            4 Cloves minced garlic
            Salt and Pepper
            Cooking Oil

PROCEDURE
     1. Heat the pan and add the cooking oil then sauté onion and garlic.
     2. Add the Ham and the Tomato and continue to sauté until ham is cooked.
     3. Pour the beaten and eggs and stir until the mixture is coated by the egg then salt and pepper to taste. Served

TIPS: Served this dish for breakfast with rice or toasted bread and a mixture of mayo and catsup.
